  1. How do we make our Chocolates ?

  1. Cocoa Bean Selection and Roasting: High-quality cocoa beans are selected and roasted to develop their flavor. Roasting also helps remove any moisture and loosen the outer shell.

  2. Grinding and Winnowing: The roasted cocoa beans are ground into a paste called cocoa mass, which consists of cocoa solids and cocoa butter. The paste is then winnowed to separate the cocoa solids from the cocoa butter.

  3. Conching: The cocoa mass is transferred to a conching machine, where it is continuously mixed and heated at controlled temperatures for several hours. This process smooths the texture, develops flavor, and reduces any bitterness.

  4. Adding Ingredients: Depending on the desired chocolate type, ingredients like sugar, milk powder, and additional cocoa butter may be added to the conched mass. This step contributes to the overall taste and texture of the final chocolate.

  5. Refining and Conching: The mixture is refined to achieve a smooth and uniform texture. It goes through further conching, which continues to enhance the flavor and texture while removing any remaining moisture.

  6. Tempering: The chocolate is tempered to ensure it has the right crystalline structure. This involves carefully heating and cooling the chocolate to specific temperatures, which gives it a glossy appearance, firm texture, and longer shelf life.

  7. Molding: The tempered chocolate is poured into molds, allowing it to cool and solidify into various shapes and sizes. This step can include adding fillings, nuts, or other inclusions to create different chocolate varieties.

  8. Packaging: Once the chocolates have set, they are removed from the molds and packaged into boxes, bags, or other suitable containers. Proper packaging helps protect the chocolates from moisture, heat, and other external factors that could affect their quality.
